More likely than not the computer runs in open loop mode when accelerating, under a lot of power, etc. By open loop, I mean that it follows a pre-programmed Fuel Injection map when the computer can't keep up with all the fast changes going on under the hood.
All of the fuel injection systems did this in from the 80's through at least sometime in the 90's, maybe even later. The problem was the systems weren’t powerful enough to process all the inputs all the time, so they defaulted to processing only when they could. Most only ran in full control only at idle and at steady road speeds. The pre-programmed injection map was close enough to take care of the rest.
If the car manufacturers are still doing this today then VW may not be doing anything wrong, and there may not be anything to "fix".
