Hard to get top dollar for a used car these days, especially for a V10 powered car since everyone knows in the back of their minds gas will go up again, it's just a matter of when.
If you can, try sell the Tourareg privately, maybe to someone out of your area. List it on autotrader / cragslist etc in Vancouver/Edmonton/Calgary etc. Check ebay listing for COMPLETED sales to see what they have recently sold for, this gives you some idea of current maket prices.
If your local dealers don't give you a good price on a new car, go out of province....somewhere out there is hungry dealer willing to knock a few thousand off their price to get a sale.
Troll around sites like this one for advice, they highlight the games dealers play:

If VW USA lets you transfer warranty to Canada, and RIV.CA has Jetta Wagons on their approved list, see if it makes sense to buy the car from a US dealer, many US dealers are barely alive.
And lastly, there's no feeling like a brand new car, but you pay a big penalty buying a new car. What about a clean, low mileage Jetta that is 1-2 years old? Why not consider a new used car? Let the first owner take the depreciation...like you will have to do with the Touareg....
