The wire you refer to is the one used to trigger the pilot light LED on
the kitchen LED panel. It comes from the thermocouple and carries a
tiny electrical signal which is amplified by a chip in the LED panel and
then used to drive the pilot indicator LED.
You can certainly run the fridge on propane without putting it back into
the Westy. The fridge will run in propane mode with no external
electrical source needed to light or run. All it needs is propane at the
correct pressure and this means using a source with a pressure regulator
set to 10-11 inches of water.
